Milk Duds Brownies

  • 150 grams of melted unsalted butter
  • 150 grams of brown sugar

Method:

Preheat your oven to 165ºc and prepare a twenty centimetre square dish by lightly greasing it.

Mix the sugar, egg, vanilla extract, salt and melted butter in a large bowl until well combined. Fold in the cocoa powder, flour and chopped milk duds. Pour the batter into the dish and bake for approximately fifteen minutes. If you like your brownies to be deliciously fudgy fifteen minutes will suffice, but if you want wonderfully chewy brownies you may want to give them a little longer in the oven.

If you want pretty perfect squares, you will need your brownies to go completely cool before you cut them. Otherwise, dig in when they are messily hot and delicious.

Decoration:

Fizzy Cola Bottle Chocolate Cupcakes

While you may have heard of cola being used to marinade meat, you may not be aware of the incredible flavour combination of chocolate and fizzy cola bottles. If you’re still not convinced, you need to give these fizzy cola bottle chocolate cupcakes a try.

Ingredients for 6 Large Cupcakes or 12 Small Cupcakes:

100 grams of sifted plain flour

125 grams golden caster sugar

½ teaspoon baking powder

Pinch of salt

One small egg

60 millilitres of buttermilk

One tablespoon cocoa powder

60 grams unsalted butter

One teaspoon vanilla extract

75 millilitres of cola

Fizzy Cola Bottle Chocolate Cupcakes

Method:

Preheat your oven to 175ºc and line your muffin tin.  Combine the sugar, salt, baking powder and flour in a bowl. In a jug whisk together the buttermilk, vanilla extract and egg. In a heavy bottomed pan, melt the cola, butter and cocoa until fully incorporated. Mix this into the flour mixture alternatively with the buttermilk. Stir well until all the ingredients are well combined.

Spoon the mixture into the muffin liners and bake. Larger cupcakes will need approximately 15 minutes while smaller ones are likely to need less than 10. The cupcakes should look golden brown, and you should be able to insert a skewer and have it come out clean. Allow your cupcakes to go cold before decorating.

Decorating Your Cupcakes:

Do not overmix the batter, the mixture should be smooth and well combined, but the odd lump will not be a problem. Spoon the mixture into the cupcake liners. Fill them up to 3/4s to avoid the cupcake overflowing in the oven. Bake them for between ten and twenty minutes depending on whether they are large or small. Err on the side of caution and check that a skewer comes out clean from the centre of one cupcake. Allow the cupcakes to cool fully on a wire rack before you attempt any decoration.

Decorating: To decorate these delicious cupcakes you can either use a basic chocolate ganache or this wonderful whipped buttercream. All you need is 275 grams of icing sugar, 1 tablespoon of lemon juice, a pinch of salt, 1 teaspoon of vanilla extract, 225 grams of softened unsalted butter, 125 grams of chocolate chips. You will also need extra M&M’s for garnishing. Heat the chocolate chips in a heatproof bowl set over a pan of boiling water. Alternatively, you can microwave the chocolate for thirty seconds until melted and smooth.

In the meantime, whisk the sugar and butter until the mixture is light and fluffy. Add the vanilla extract, cream and melted chocolate to the butter and sugar and whip until it’s fully incorporated. Add in a little lemon juice and salt to taste. Whip the mixture until it looks fluffy and light.

The frosting should be thick enough to pipe it onto the top of the cupcakes. You can use a fluted nozzle or simply spread it using a palette knife. Garnish the top of the frosting with a sprinkle of M&Ms.

In a heavy bottomed saucepan, heat the root beer with the butter and cocoa powder until all the butter is melted and the cocoa is smoothly combined. Add in the sugars and whisk the mixture until all the sugar is dissolved. Remove your pan from the stovetop and give it a few minutes to cool slightly.

In a separate bowl, mix the flour, salt and baking powder together. Whisk the eggs into the cocoa mixture one at a time before folding in the flour. You may find the mixture has a few lumps, but don’t over beat as you will make the cake tough.

Choo Choo Birthday Cake

Whether you are a youngster or only young at heart, you are likely to be a fan of the Choo Choo bar. These delicious chocolate treats are a fantastic snack, but can also be a great inspiration for a very special birthday cake. Trains are popular with kids of all ages, so a train birthday cake is the perfect way to showcase your favourite Choo Choo bar. Ingredients for One Medium Sized Cake: 

225 gram of softened unsalted butter

225 grams caster sugar

225 grams of self raising flour

1 teaspoon baking powder

4 eggs

 

Instructions:

Preheat your oven to 180 degrees. Cream the sugar and butter together until it is light and creamy. Beat in each of the eggs slowly and once they are incorporated fold in the flour and baking powder.

Divide the cake mixture into four 25 x 8 centimetre bar tins. Bake for 25 to 30 minutes until golden brown. Allow the all the cakes to cool fully on a wire rack before assembling and decorating.

Making the Train:

You will need a 225 gram sponge roll,

red, blue, apricot, purple and green food colouring

1 package of thin liquorice

Chocolate sprinkles,

20 round chocolate biscuits

A pack of chocolate buttons

1 Ice cream wafer

A few pieces of popcorn

A wooden skewer, a pipe cleaner and a serving board.

You will also need buttercream for filling and icing.

Cut each of the bar cakes vertically to create eight pieces. Five of these pieces will be needed to make the back of the engine and the tops of the train carriages. The remaining three pieces need to be cut horizontally to create the bases of the carriages and the engine. The piece needs to be cut to create a quarter size piece.

Create the engine smoke stack by cutting a four centimetre slice off, holding it upright and using a plain cutter. The rest of the sponge roll will be needed to make the engine.

Use the buttercream as the glue to assemble your train. You will need to tint small amounts of the buttercream different colours for each of the carriages. Cover the sides and tops of the carriages and engine. Outline the tops of the carriages and the engine with thin liquorice.

Cover the sides and top of your smoke stack with red tinted buttercream and coat with the chocolate sprinkles. Use your wooden skewer to make a hole through several pieces of popcorn and thread them onto the pipe cleaner. This should be inserted into the smokestack.
