Milk Duds Brownies

Whether you love dark chocolate milk duds or regular milk duds, Australia sweet enthusiasts are sure to love these delicious brownies. The brownies are deliciously sweet and chewy, making them a perfect snack or even a fantastic dessert.

  • 150 grams of melted unsalted butter
  • 150 grams of brown sugar
  • 65 grams of cocoa powder
  • Pinch of salt
  • 75 grams of flour
  • ½ teaspoon vanilla extract,
  • 1 egg
  • 100 grams of chopped milk duds

Preheat your oven to 165ºc and prepare a twenty centimetre square dish by lightly greasing it.

Mix the sugar, egg, vanilla extract, salt and melted butter in a large bowl until well combined. Fold in the cocoa powder, flour and chopped milk duds. Pour the batter into the dish and bake for approximately fifteen minutes. If you like your brownies to be deliciously fudgy fifteen minutes will suffice, but if you want wonderfully chewy brownies you may want to give them a little longer in the oven.

If you want pretty perfect squares, you will need your brownies to go completely cool before you cut them. Otherwise, dig in when they are messily hot and delicious.

While these brownies are deliciously yummy, if you are making them for a special occasion you may want to add a little decoration. Once you cut your brownies into perfect squares, you can drizzle with a little melted chocolate. White chocolate makes a perfect contrast to the rich brown colour, but you can decorate according to your preferences. You could also scatter Milk Duds across the melted chocolate for an even yummier finish.

Serving Suggestions:

Your brownies are delicious with a cup of coffee or even a cool glass of milk. However, they can also be used in several delicious ways. If you want to make an extravagantly rich dessert, serve your brownies with a good quality vanilla ice cream and drizzled with a toffee sauce.  This can be made with 100 grams of sugar, 100 grams of butter, a teaspoon of vanilla extract and 100 millilitres of double cream. All you need to do is melt the butter and sugar together, heating until it becomes a golden brown colour. Remove the pan from the heat and gently stir in the vanilla and cream until the mixture is rich and thick. This is especially delicious when the brownies and sauce are still warm, mixing with the wonderfully cold ice cream.

You can even use the brownies as a base for a decadent sundae. Layer your sundae glasses with pieces of brownie, chocolate and vanilla ice cream, topping with toffee sauce. Sprinkle the top with whipped cream and more Milk Duds.

Preheat your oven to 175ºc and line your muffin tin.  Combine the sugar, salt, baking powder and flour in a bowl. In a jug whisk together the buttermilk, vanilla extract and egg. In a heavy bottomed pan, melt the cola, butter and cocoa until fully incorporated. Mix this into the flour mixture alternatively with the buttermilk. Stir well until all the ingredients are well combined.

Spoon the mixture into the muffin liners and bake. Larger cupcakes will need approximately 15 minutes while smaller ones are likely to need less than 10. The cupcakes should look golden brown, and you should be able to insert a skewer and have it come out clean. Allow your cupcakes to go cold before decorating.

Decorating Your Cupcakes:

One of the most enjoyable aspects of making cupcakes is letting your creativity go a little wild with the decorating. While these cupcakes are delicious undecorated, they can be truly spectacular with a little adornment. With the fizzy cola bottle frosting and some extra decorative touches, these cupcakes will be a showstopper at any event.

To Make Fizzy Cola Bottle:

You will need;

200 grams of sifted icing sugar

60 grams of softened unsalted butter

One tablespoon of cola syrup

One tablespoon of milk

Fizzy cola bottles for decoration

Beat the butter until it is smooth before mixing in the icing sugar. Be sure to do this a little at a time to avoid an icing sugar cloud in your kitchen. Add in the syrup and milk, mixing well. Beat the frosting until it becomes fluffy and light. Pipe swirls of the icing on the cupcakes, dotting the fizzy cola bottles on top. If you want extra fizz in your icing, you could also stir in some popping candy. However, this will lose its pop, so this is best used if you are icing only an hour or two before serving.

These cupcakes make a fantastic birthday party treat or can be used for hen nights, weddings or any other special occasion. Alternatively, if you just fancy a sweet treat, they are perfect for keeping on hand. The finished cupcakes can be kept in a cool temperature for several days. However, you could keep the un-iced cakes in an airtight tin for up to a week before icing as and when needed.

Gently fold the bulk M&Ms into the mixture and don’t worry if the colours start to run.

Spoon the mixture into the cupcake liners. Fill them up to 3/4s to avoid the cupcake overflowing in the oven. Bake them for between ten and twenty minutes depending on whether they are large or small. Err on the side of caution and check that a skewer comes out clean from the centre of one cupcake. All you need is 275 grams of icing sugar, 1 tablespoon of lemon juice, a pinch of salt, 1 teaspoon of vanilla extract, 225 grams of softened unsalted butter, 125 grams of chocolate chips. The frosting should be thick enough to pipe it onto the top of the cupcakes. You can use a fluted nozzle or simply spread it using a palette knife. Garnish the top of the frosting with a sprinkle of M&Ms.

Ingredients for One Medium Sized Cake:

225 gram of softened unsalted butter

225 grams caster sugar

225 grams of self raising flour

1 teaspoon baking powder

4 eggs

Preheat your oven to 180 degrees. Cream the sugar and butter together until it is light and creamy. Beat in each of the eggs slowly and once they are incorporated fold in the flour and baking powder.

Divide the cake mixture into four 25 x 8 centimetre bar tins. Bake for 25 to 30 minutes until golden brown. Allow the all the cakes to cool fully on a wire rack before assembling and decorating.

Making the Train:

You will need a 225 gram sponge roll,

red, blue, apricot, purple and green food colouring

1 package of thin liquorice

Chocolate sprinkles,

20 round chocolate biscuits

A pack of chocolate buttons

1 Ice cream wafer

A few pieces of popcorn

Choo Choo bars for decoration

A wooden skewer, a pipe cleaner and a serving board.

You will also need buttercream for filling and icing.

Cut each of the bar cakes vertically to create eight pieces. Five of these pieces will be needed to make the back of the engine and the tops of the train carriages. The remaining three pieces need to be cut horizontally to create the bases of the carriages and the engine. The piece needs to be cut to create a quarter size piece.

Create the engine smoke stack by cutting a four centimetre slice off, holding it upright and using a plain cutter. The rest of the sponge roll will be needed to make the engine.

Use the buttercream as the glue to assemble your train. You will need to tint small amounts of the buttercream different colours for each of the carriages. Cover the sides and tops of the carriages and engine. Outline the tops of the carriages and the engine with thin liquorice.

Cover the sides and top of your smoke stack with red tinted buttercream and coat with the chocolate sprinkles. Use your wooden skewer to make a hole through several pieces of popcorn and thread them onto the pipe cleaner. This should be inserted into the smokestack.

Use a Choo Choo bar to create the effect of railway sleepers. Use the chocolate biscuits to represent wheels and use the chocolate buttons for additional detail. Finally, attach a strip of wafer to the front of the engine as a “cow catcher”.
